- 1 taza calabacín rallado y escurrido

- 1 taza garbanzo cocido
- 1 zanahoria

- Ponemos a cocinar el pollo en 4 tazas de agua con una cucharadita de sal y media de color de achiote. También le agregamos unos dientes de ajo enteros, una rama de cebolla y una de perejil para darle sabor al caldo.
- Mezclamos la media taza de #harina de maíz con una taza de caldo del pollo caliente y revolvemos hasta que se integre por completo.
- Mezclamos en un bowl grande, el arroz cocido, los garbanzos, el calabacín rallado y la masa de harina de maíz. (yo cocino el arroz con el mismo caldo del pollo para que le dé sabor y color)
- Desprendemos el pollo del hueso y dejamos solo la pulpa.
- Cortamos la zanahoria en tajadas muy delgadas y el perejil en ramitas pequeñas.
- Disponemos de una hoja de chisgua, biajo o de plátano... de tamaño grande aprox 20 por 30 cm y otra más pequeña en el centro para el refuerzo.
- Colocamos 1.5 cucharadas grandes de masa, en el centro el pollo, una tajada de zanahoria y encima la ramita de perejil.
- Envolvemos las hojas llevando la parte inferior hacía arriba y trayendo la parte superior hacía abajo, luego se doblan hacía atrás los laterales y se anudan con piola, cabuya o con una tira de la misma hoja.
- Se hace una cama de hojas en la olla donde se van acocinar para que los tamales no toquen el fondo y se colocan uno sobre otro. Se agrega agua caliente hasta una cuarta parte de la olla y se ponen a cocinar una hora.
- Durante este tiempo hay que agregar agua caliente a medida que se vaya secando.
- Listos para servir con pano arepa y se acompañan de un delicioso chocolate caliente.
