  1. En un bolws batimos la manteca en temperatura ambiente con el azúcar, luego agregar los huevos.. batimos e incorporamos la esencia y ralladura de limón.
  2. Agregamos la harina y lo incorporamos con una espátula de manera envolvente, hasta formar la masa. (Nunca con la mano, ya que no tenemos que darle calor a la masa, sino está se nos hace pegajosa por la manteca) llevar a la heladera durante 40' minutos.
  3. Mientras enfriamos la masa, en un plato pisamos el dulce de batata y lo vertemos a una cacerola con el medio vasito de agua, revolvemos hasta hacerlo un poco líquido.
  4. Pasado los 40 min, sacamos la masa y lo agregamos a nuestro molde enmantecado y enharinado, lo llevamos al horno 180° durante 15 min, retiramos y agregamos la batata y las tiritas (que fuimos haciendo en esos 15 min) pintamos con huevo y lo llevamos al horno 35 min.
